When laws make it illegal to sell yellow dyed margarine, and you don't wish it to look an unappetizing dead white.

When margarine (or as it was also known, oleo) was invented, dairy interests managed to get laws passed making it illegal to dye it yellow for sale, ostensibly to keep consumers from confusing it with butter, but more likely to make it look unappealing so that they wouldn't buy it. Margarine makers sold little capsules of food coloring along with the margarine so that customers could dye it themselves by kneading the coloring into the margarine before serving it.
